Chef’s recipe: Raspberry and Apple Spritz

Sweet caramelised raspberry, crisp apple, zesty lime and a sparkling raspberry finish make this bright, refreshing cocktail the perfect drink for summer evenings, BBQs and relaxing in the garden. The recipe is courtesy of Dereece Gardner, founder of Desire Cocktail Bar in Stoke-on-Trent, who shares how to make this vibrant summer drink.

Ingredients:

  • 50ml vodka
  • 25ml caramelised raspberry syrup
  • 35ml cloudy apple juice
  • 15ml fresh lime juice
  • Raspberry soda, to top
  • Cubed ice

For the caramelised raspberry syrup:

  • 100g caster sugar
  • 150g raspberries
  • 100ml water

Method:

To make the syrup, add the sugar and raspberries to a small pan over medium heat.

Cook, stirring occasionally, until the sugar melts and the mixture turns golden brown and caramelised.

Carefully add the water and simmer for two to three minutes until smooth.

Strain if you want a smoother syrup, then leave to cool.

Fill a large chilled wine glass with ice.

Add the vodka, caramelised raspberry syrup, apple juice and fresh lime juice.

Stir gently to chill and combine the ingredients.

Top with raspberry soda.

Give the drink one final gentle stir and garnish with fresh raspberries and a thin slice of apple or a lime wheel.
