Chimichecas to bring a taste of Mexico to the Moorlands

Mexican eatery Chimichecas has been announced as the venture set to complete the line-up of food businesses at Leek’s Trestle Market. 

The business was founded by chef Angel Fernandez, who is from Puebla, regarded as one of the historic centres of Mexican cuisine, and Joseph Richardson, a Leek local with a family history of running local firms. 

Angel, who moved to the UK in 2024, has more than a decade of professional kitchen experience and training in Mexico and in the USA.

The pair have previously been selling traditional recipe salsas on local markets including at Leek’s Sunday Supplement

Visitors to their Trestle Market base, which is due to open this spring, will be able to enjoy dishes such as tacos al pastor and birria, as well as some suitable for vegetarians and vegans. 

It will join Scrumbles Cake Shop and The Slamwich Club at the market which won the Best Small Indoor Markets Award with the town’s Butter Market at the Great British Market Awards 2026. 

Angel and Joseph said: “We’re immensely excited to be bringing a piece of Mexico to the Staffordshire Moorlands. Centuries of culinary tradition meets centuries of market tradition, and we can’t wait to share the true flavours of Mexico with the area.” 

Councillor Matt Swindlehurst, Staffordshire Moorland District Council’s cabinet member for leisure and tourism, said: “This is yet more fantastic news for our award-winning markets. The new food units have been a great success and a big draw for foodies from the Moorlands and further afield. Adding Chimichecas to the mix will only make the markets more popular and we’re delighted to welcome them.  

“The investment we’ve made in rejuvenating the markets has been worth every penny. Leek has always been a market town and this re-invention of the Butter and Trestle markets for the modern day continues that legacy and ensures the markets will remain a defining feature of the town for generations to come.”
