A microbrewery is set to open a new site in Leek’s historic Butter Market where customers can request their own bespoke recipes.
Wilsons of Warslow, which is based at The Greyhound pub in Warslow in the Staffordshire Moorlands, will launch in the market’s former Blueberry Cottage unit in January.
The taproom will initially operate as a ‘bottle room’, selling bottled beer, merchandise and brewing ingredients – and the team hope to add seating and sell draught beers in time.
They also plan to offer a bespoke brewing service where they can create beers to a customer’s specific recipe.
The Butter Market site will be staffed by existing team members who are well-versed in the microbrewery, but as it grows they hope to take on additional staff.
Lee Wilson-Hart, who took on The Greyhound pub in 2019, said the venture will bring a new audience to both the market and the pub.
He said: “The pub sits between Leek, Ashbourne and Buxton, and while it has a Buxton/Stockport postcode, we identify as being near Leek. It is a lovely market town with lots of independent shops and when the space in the market came up it was perfect.
“It will pull people up to the pub and bring people to Leek too. We’re excited to get into the town and start speaking to people from all walks of life.”
The shop will be open 10am to 4pm on Wednesdays, Fridays and Saturdays, and during the Totally Locally market on the first Sunday of each month. It is expected to open by the end of January, although a date has not yet been confirmed.
Lee added: “We want to go the extra mile – if someone wants a specific recipe, we can make it. People are quite excited about what we are doing, and we’re proud of the market, the heritage of the town and the community here.”
